Taco Bowl

Serves: 2 Cook Time: 15 min Prep Time: 5 min

Ingredients

  • 1/2 cup cooked brown rice or quinoa

  • 1/2 cup cooked black beans

  • 1/4 cup corn

  • 1/2 cubed & baked sweet potato

  • 1/2 avocado, cubed

  • 1/4 red onion, diced

  • Fresh cilantro

  • Lime juice

  • Protein: ground beef, grilled chicken or shredded flank

Directions

  1. Layer rice, beans, sweet potato and corn in bowl.

  2. Top with avocado, onion, cilantro.

  3. Squeeze lime over top. Add protein if using.

  4. Sauce: I enjoy using Chipotle flavored Bitchin’ ® sauce, but you may add cream as well or leave as is.
