Taco Bowl
Serves: 2 Cook Time: 15 min Prep Time: 5 min
Ingredients
1/2 cup cooked brown rice or quinoa
1/2 cup cooked black beans
1/4 cup corn
1/2 cubed & baked sweet potato
1/2 avocado, cubed
1/4 red onion, diced
Fresh cilantro
Lime juice
Protein: ground beef, grilled chicken or shredded flank
Directions
Layer rice, beans, sweet potato and corn in bowl.
Top with avocado, onion, cilantro.
Squeeze lime over top. Add protein if using.
Sauce: I enjoy using Chipotle flavored Bitchin’ ® sauce, but you may add cream as well or leave as is.
