Chilaquiles

Ingredients
10 corn tortillas, cut into triangles
4 tomatoes
2-4 jalapeño (roasted for mild spice, leave seeds for heat)
1/2 onion
1/2 bunch fresh cilantro
1 garlic clove
Salt + pepper
Optional: 1-2 over-medium eggs
Optional toppings: chopped fresh onion, fresh cilantro & avocado
Directions
Bake tortillas at 375°F for 10–15 min until crisp.
Roast tomatoes, jalapeño, and onion in a dry pan or broil 5–7 min.
Blend with garlic, cilantro, salt, pepper, and a splash of water.
Simmer sauce in pan, add tortillas, toss to coat.
Top with egg & optional toppings
