Chilaquiles

Serves: 2–3 Cook Time: 20 min Prep Time: 10 min
Protein: ~20g (with eggs or chicken)

Ingredients

  • 10 corn tortillas, cut into triangles

  • 4 tomatoes

  • 2-4 jalapeño (roasted for mild spice, leave seeds for heat)

  • 1/2 onion

  • 1/2 bunch fresh cilantro

  • 1 garlic clove

  • Salt + pepper

  • Optional: 1-2 over-medium eggs

  • Optional toppings: chopped fresh onion, fresh cilantro & avocado

  • Directions

    1. Bake tortillas at 375°F for 10–15 min until crisp.

    2. Roast tomatoes, jalapeño, and onion in a dry pan or broil 5–7 min.

    3. Blend with garlic, cilantro, salt, pepper, and a splash of water.

    4. Simmer sauce in pan, add tortillas, toss to coat.

    5. Top with egg & optional toppings
