Chicken Apples & Shallots

Serves: 2 Cook Time: 20 min Prep Time: 5 min

Ingredients

  • 2 chicken breasts, sliced

  • 1 apple, sliced

  • 1-2 shallot, thinly sliced

  • 1-2 garlic cloves ( or use powder)

  • 1 tbsp olive oil

  • 1 tbsp butter

  • Chicken Seasoning: Salt + pepper, onion powder, paprika, thyme, oregano & orange zest

Directions

  1. Heat oil in pan. add garlic & shallots. Sautée until caramelized.

  2. Add chicken, turn up the heat and cook on high for 3-4 minutes of both sides, at the same time add the apples (pears work as well), fresh thyme, a dash of brandy and some honey. (Option to make it hot by mixing your honey with some cayenne pepper) Sauté 5–7 min.

  3. Serve with rice, quinoa couscous, or for a grain-free option : sweet potatoes, cut in squares and baked at 350 F for 35 minutes.
